BBQ Pork Stuffed Avocados

INGREDIENTS
- 120 g US pork tenderloin
- 2 avocados
- ½ cup BBQ sauce
- 2 tablespoons red bell pepper
- 2 tablespoons onion
- 3 cloves fresh garlic
- FOR AIOLI
- 3 tablespoons low-fat mayonnaise
- 1 tablespoon fresh lemon juice
- 3 cloves garlic, minced
- 2 tablespoons fresh cilantro, finely chopped
- Salt and pepper to taste
Preparation
- Cut the avocados in half and remove the pit. Scoop out a bit of the flesh to make room for the filling.
- Add 1 tablespoon of olive oil to a skillet. Sauté the onion, red bell pepper, and garlic. Add the shredded pork and ¼ cup of your favorite BBQ sauce. Mix well and evenly distribute the filling among the avocado halves.
- Preheat the oven to 175 °C (350 °F).
- In a small bowl, combine the low-fat mayonnaise, lemon juice, garlic, and cilantro. Stir well. Add 1 to 2 teaspoons of water to reach the desired consistency, then season with salt and pepper to taste.
- Place the stuffed avocados in a baking dish, cover with aluminum foil, and bake for 15 to 18 minutes.
- Before serving, drizzle each half with the remaining BBQ sauce and the garlic-cilantro aioli. Garnish with fresh cilantro and green onion.
- Add a sprinkle of queso fresco on top, if desired & Enjoy!
