  • 2 avocados
  • ½ cup BBQ sauce
  • 2 tablespoons red bell pepper
  • 2 tablespoons onion
  • 3 cloves fresh garlic
  • FOR AIOLI
  • 3 tablespoons low-fat mayonnaise
  • 1 tablespoon fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons fresh cilantro, finely chopped
  • Salt and pepper to taste

Preparation

  1. Cut the avocados in half and remove the pit. Scoop out a bit of the flesh to make room for the filling.

  4. In a small bowl, combine the low-fat mayonnaise, lemon juice, garlic, and cilantro. Stir well. Add 1 to 2 teaspoons of water to reach the desired consistency, then season with salt and pepper to taste.
  5. Place the stuffed avocados in a baking dish, cover with aluminum foil, and bake for 15 to 18 minutes.
  6. Before serving, drizzle each half with the remaining BBQ sauce and the garlic-cilantro aioli. Garnish with fresh cilantro and green onion.
  7. Add a sprinkle of queso fresco on top, if desired & Enjoy!
