Grilled Snow Crab Clusters w/ Lemon Garlic Butter Sauce

INGREDIENTS

  • 4 Snow Crab Clusters (weighing between 5 and 12 ounces each)
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Preparation

  1. Preheat your grill to medium-high heat, around 375°F (190°C). If you're using charcoal, wait until the coals are ashed over.
  2. Make sure to thaw the Snow Crab Clusters fully before grilling.
  3. In a small bowl, mix melted butter, minced garlic, lemon zest, lemon juice, paprika, red pepper flakes (if using), salt, and black pepper. This will be your basting and serving sauce.
  4. Gently crack the crab clusters with a crab cracker or kitchen shears to make it easier for the diners to remove the meat later.
  5. Place the cracked crab clusters on the preheated grill. Grill for about 4-5 minutes per side, basting generously with the lemon garlic butter sauce. The crab meat should be heated through and slightly charred from the grill.
  6. Turn the crab clusters and baste the other side with the lemon garlic butter sauce. Continue grilling for another 4-5 minutes, basting occasionally, until the crab meat is thoroughly heated and has a beautiful grilled texture.
  7. Carefully remove the grilled crab clusters from the grill and transfer them to a serving platter.
  8. Drizzle any remaining lemon garlic butter sauce over the grilled crab clusters. Garnish with chopped fresh parsley for a burst of color and flavor. Serve immediately with lemon wedges on the side.
