Grilled Snow Crab Clusters w/ Lemon Garlic Butter Sauce

INGREDIENTS
- 4 Snow Crab Clusters (weighing between 5 and 12 ounces each)
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional, for spice)
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Preparation
- Preheat your grill to medium-high heat, around 375°F (190°C). If you're using charcoal, wait until the coals are ashed over.
- Make sure to thaw the Snow Crab Clusters fully before grilling.
- In a small bowl, mix melted butter, minced garlic, lemon zest, lemon juice, paprika, red pepper flakes (if using), salt, and black pepper. This will be your basting and serving sauce.
- Gently crack the crab clusters with a crab cracker or kitchen shears to make it easier for the diners to remove the meat later.
- Place the cracked crab clusters on the preheated grill. Grill for about 4-5 minutes per side, basting generously with the lemon garlic butter sauce. The crab meat should be heated through and slightly charred from the grill.
- Turn the crab clusters and baste the other side with the lemon garlic butter sauce. Continue grilling for another 4-5 minutes, basting occasionally, until the crab meat is thoroughly heated and has a beautiful grilled texture.
- Carefully remove the grilled crab clusters from the grill and transfer them to a serving platter.
- Drizzle any remaining lemon garlic butter sauce over the grilled crab clusters. Garnish with chopped fresh parsley for a burst of color and flavor. Serve immediately with lemon wedges on the side.
