Lime & Herb Grilled Chicken

INGREDIENTS

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • Juice of 2 fresh lemons
  • 4 garlic cloves, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Preparation

  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, lime juice, minced garlic, thyme, parsley, salt, and pepper.
  2. Marinate Chicken: Place chicken breasts in a resealable bag or bowl and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat Grill: Heat your grill to medium-high (375°F). Lightly oil the grates.
  4. Grill Chicken: Remove chicken from marinade and grill for about 6-7 minutes per side until the internal temperature reaches 165°F.
  5. Rest and Serve: Let the chicken rest for 5 minutes before slicing against the grain. Serve with your favorite sides.
